Banana Bread recipe


Ingredients
315g plain flour
2 tspns baking powder
half tspn bicarbonate of soda
half tspn salt
4 ripe bananas
2 egg whites
185g sugar
60ml milk
1 tspn vanilla essence


Method
  • Pre-heat oven to 180 degrees Celsius and grease the inside of a loaf tin
  • In a large bowl, combine flour, baking powder, bicarbonate of soda, and salt. Make a well in the bottom
  • In another bowl mash the bananas, add the egg whites, sugar, milk and vanilla essence and mix thoroughly. Fold this into the mixing bowl containing the flour
  • Pour into loaf tin and bake for 55-60 minutes. Push in a cocktail stick and check it comes out clean from the centre.

Storage : you can put this in the freezer for up to a month or eat within 3 days.
