Recipe : Ally's No Bake Choc-nut Tiffin Cake

*Tiffin is a form of cake-like confection composed of crushed biscuits (most commonly digestive biscuits) sugar, syrup, raisins and cocoa powder, often covered with a layer of melted chocolate. Unlike regular cakes, Tiffin does not require baking. Instead, following preparation of the mixture, the confection is chilled until set.


  • 4 tablespoons golden syrup
  • 250g digestive biscuits
  • 250g dark chocolate
  • 50g raisins
  • 50g nuts
  • 3 tablespoons of cocoa powder
  • 125g butter
Method
  1. Put the syrup and the butter into a glass bowl and microwave for 2 minutes until melted.
  2. Crush the biscuits in another bowl with a rolling pin. You want to leave it as small pieces of biscuit not a fine powder.
  3. Pour the syrup and butter mixture into the crushed biscuits.
  4. Now break up the chocolate and heat in microwave for 2 and a half/3 minutes
  5. Add to the mixture along with 3 tablespoons of cocoa powder, the raisins and nuts.
  6.  Squish down onto a greased and lined baking tin and refrigerate for at least an hour.
