Recipe : Mandarin orange cheesecake
I like no-bake desserts that can be made in advance. Cheesecakes are easy to make, taste sinfully delicious and make dinner parties a cinch - no last minute stress involved.

Ingredients and equipment
- 23cm springform cake tin
- 22 digestive biscuits
- 8 tablespoons melted butter
- 400g cream cheese
- 250g mascarpone cheese
- 120g caster sugar
- 3 tablespoons milk
- 184ml pot of double cream
- 2 teaspoons orange extract
- 220g jar of mandarin orange segments in natural juice
Method
- Crush the biscuits by putting them in a bag and bang with a rolling pin or wooden spoon.
- Put the broken biscuit crumbs into a large mixing bowl and stir in the melted butter.
- Transfer the mixture into the greased cake tin and press down with the back of a spoon or your hand. Place the biscuit base into the fridge to set for about 30 minutes.
- Now you should put the cream cheese, the orange extract, mascarpone cheese, sugar and milk into a the mixing bowl and stir well.
- In a separate mixing bowl pour in the double cream and whip until it the same consistency as a thick custard. Fold the double cream into the cheese mixture.
- Now remove your cake tin from the fridge, and spread the cheesecake mixture evenly over the biscuit base.
- Decorate the top of the cheesecake with the mandarin orange segments and some flaked chocolate.
- Allow to set in the fridge overnight (or at least 4 hours before serving)
