Whats for dinner? Fish Pie
Another family favourite but not one that I do so often as it takes a little bit longer than my usual 20 minute meals.
Serves 4
Ingredients
- 400g white fish fillets e.g. cod (I use pollock but shhh no one ever notices!) (no bones, no skin)
- 400g salmon steaks (no skin, boned)
- 2kg potatoes
- 200g butter
- 50g plain flour
- Salt and pepper
- 600ml (1 pint) of full fat milk
- 100g cheddar cheese
- 1 small onion cut into quarters
Method
- Pour 500ml of the milk into a large frying pan and poach the fish fillets. Add the quartered onion. Bring to boil and simmer for 8 minutes.
- Remove the fish and break up into large pieces, into an oven proof dish. Pour the milk mixture into a bowl or jug and leave to cool down.
- Now we make the white sauce by melting 100g of the butter in the frying pan. Add the flour and slowly stir in the milk mixture you had set aside. You want to create a nice thick white sauce so that it coats the back of the spoon. Season with salt and pepper then pour over the fish pieces.
- Turn on the oven and preheat to 200C (180C fan). Boil the peeled and cut potatoes for 20 minutes. Mash with the remaining milk, plenty of seasoning and butter.
- Place on top of the fish pieces, using a fork to fluff up the top. Sprinkle on the cheddar cheese and bake for 30 minutes.
