What's for Dinner?
Chow Fan. Easy-peasy family favourite which is good for using up cooked rice and meat. This recipe will easily feed eat 4 people. Adapt it to include your family's favourite vegetables and meats.
Ingredients
Big bowl of cooled cooked rice.
4 eggs
1 onion
1 pepper
1 good handful of peas
1 good handful of sweetcorn
1 good handful of Prawns
1 cooked chicken piece (breast/thigh meat)
200g of chopped up bacon bits/lardons
2 cloves of garlic
Dark soy sauce
Sesame oil
Method
Fry the onion in a wok with a little vegetable oil, add the pepper, garlic and bacon bits and then the other veggies.
Add the eggs until it makes an omlette type thing.
Add cooked chicken (if using)
Add the rice and keep moving it with the spatula, turning the rice over and over to cook evenly.
Finally add the cooked prawns (if using) and 4 or 5 good dollops of soy sauce. You want a nice colour (but not too salty a taste)
Drizzle over with sesame oil while still in the wok before transferring to serving bowls.
