What's for dinner: Goan Prawn Curry
Ingredients
1 tablespoon oil
2 tablespoons curry paste (I like madras)
1 onion, finely chopped
2 tomatoes, chopped
3 pinches of crushed dried chilli flakes
2 cm cube of ginger, grated
2 tablespoons of tamarind paste
80ml of coconut milk
500g prawns (I used frozen, peeled and cooked)
Method
- Heat the oil in the pan and fry the curry paste for about a minute. Add the onion and fry until golden. Add the tomato, garlic, chilli and ginger and fry over a low heat setting for about 10 minutes. The oil should separate from the sauce.
- Now add the tamarind paste and bring everything to the boil. Add the coconut milk and stir, seasoning with salt.
- Add the prawns and cook for a very short time to heat the prawns through.
- Eat with rice, Indian naan bread and onion bajis as a side dish.
