Recipe: Garlic and herb potato wedges


My contribution to the BBQ. So easy and a very delicious alternative to a baked potato or chips (french fries).

Ingredients

  • 5 potatoes, scrubbed and rinsed.
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • Salt and pepper
Method
  • Preheat oven to 210 degrees.
  • Cut each potato length wise. Then cut each  length wise to make 4 wedges.
  • Mix the oil and herbs together into a bowl. Season well with salt and pepper. Tip in the potato wedges and toss so that everything has been coated.
  • Now place the wedges onto a baking tray and cook for around 20 minutes in the oven. 
  • They should be nicely browned and have a crusty edge. 
  • Serve immediately straight from the oven.
