Recipe: Anzac biscuits
A new favourite at our house.. Anzac (or as Son no. 1 says "Anthrax") biscuits.

Ingredients to make 20 biscuits
- 85g rolled oats
- 85g dessicated coconut
- 100g sugar
- 100g plain flour
- 100g butter
- Tablespoon of golden syrup
- 1 teaspoon bicarbonate of soda
Method
- Preheat the oven to 180C (or 160C fan)
- Put the oats, coconut, plain flour and sugar into a mixing bowl and stir to combine all ingredients.
- In a microwavable bowl add the butter and a tablespoon of golden syrup. Cover and heat for 30 seconds in the microwave. It should be liquid.
- Boil the kettle. Put one teaspoon of bicarbonate of soda into a small dish and then add 2 tablespoons of the boiled water and stir. Pour this into the butter/syrup bowl. Stir once more.
- Making a well at the bottom of the mixing bowl with the dry ingredients, pour in your buttery syrup. Using a spoon to stir everythng together.
- Line baking trays (I use 2) with baking paper and pinch balls of the biscuit dough and shape with your hands. This recipe is enough for 20 biscuits. Make sure you leave enough room on the baking tray for the biscuits to expand.
- Bake in oven for 8-10 minutes. We like ours at 8 minutes as we prefer a softer biscuit rather than a snappy crunchy one.
